Lime, guava, brine, a bit of crunch, and bone dry. Picked earlyish, wild ferment, a good while on lees.
Strawberry, blueberry and smoke with a bit of grip at the end. Picked early in the morning so the colour stays pale.
Flint, pear, nectarine, nougat. No oak – lees and a little stirring do the work.
